This is how the marshmallows look, lightly broiled. You can go a little darker and it will still taste fine, you just don't want to char the marshmallows. |
Berry Mallow Yam Bake
1/2 c. Flour
1/2 c. packed Brown Sugar
1/2 c. uncooked plain instant/quick oatmeal
1 tsp. cinnamon (or more to taste)
1/3 c. margarine - softened
2 -17 oz. cans yams - drained (sometimes I buy one of the larger cans and one smaller can, but close to 34 oz is fine)
1+ can whole berry cranberries (sometimes I do more than one can, depends on my mood and what else will be served)
*optional*- orange zest (for a little tangy twist you can add the orange zest at any stage of the recipe. I did enough to sprinkle a good coating across the top before I added the crumb mixture and everyone liked it. If you're not sure, go light on the zest, or only do half.)
Miniature Marshmallows. (**do NOT use the multi-colored marshmallows. I did one year and when they melted it looked like vomit. Also larger marshmallows tend not to melt evenly, if you don't use mini's I would recommend using scissors to cut standard marshmallows in half**)
~Combine flour, sugar, oats and cinnamon; cut in margarine. Mix by hand until mixture resembles course crumbs. Lightly toss 1 cup crumb mixture with yams and cranberries; arrange in 9x13" casserole dish. Sprinkle top with remaining crumb mixture. Bake in 350 degree oven for 35 mins. Top with marshmallows and broil until lightly browned. (You can use a handheld butane flame to brown the tops of the marshmallows, but I prefer the broil method as it melts the whole marshmallow more evenly)
Serves 8-10
